Here is a little Asian Cooking for you all! Sesame Chicken Recipe

3 boneless skinless chicken breasts
3 cups peanut oil
2 tbsp sesame seeds
2 tbsp finely sliced green onion
Marinade:
2 tbsp sherry
2 tsp sesame oil
1 tsp powdered chicken bullion
1/8 tsp white pepper
1 ½ tsp sugar

Sauce:
¼ cup sugar
1/3 cup honey (can be substituted with Karo Syrup)
¼ cup ketchup
2 tbsp white vinegar
1 tbsp soy sauce

Coating:1 cup flour
2 eggs
1 cup cornstarch
1. Remove all of the fat from the chicken and each breast into 1 inch to 1 ½ inch pieces. Place these pieces in a container to be marinated.
2. In a small cup mix together all of the ingredients for the marinade. Then pour this marinade over the chicken using your hands to make sure that it coats each piece evenly.3. Cover the chicken and let it marinate in the refrigerator for 1 hour.
4. While the chicken marinates, prepare the sauce. In a large bowl mix together the ingredients for the sauce. Stir until everything is thoroughly mixed and then set it aside.
5. Prepare to coat the chicken. Place the flour and cornstarch in separate bowls. In another bowl, beat the eggs. Set a clean plate nearby to place the coated chicken on.
6. After the chicken has marinated for an hour, begin the coating process.
7. To coat the chicken dip each piece first in the flour, then in the egg, and finally into the cornstarch. Shake off the excess and place the chicken piece on the clean plate. Continue coating each piece of chicken the same way.
8. Once all of the chicken pieces are coated, heat the peanut oil in a large wok on high.
9. When the oil is hot, add about 1/3 of the chicken pieces and let them cook for 8 to 10 minutes or until brown. Remember we don't want to overcrowd the wok. Depending on the size of your wok you may want to cook more or less pieces at one time.
10. After 8 to 10 minutes, remove the chicken pieces with a slotted spoon and place them on a plate lined with paper towels. Then continue cooking the remaining chicken pieces in batches.
11. When all of the chicken is cooked, remove the oil from the wok and wipe it out with a paper towel.
12. Add the sauce mixture and heat it on high. When the sauce starts to bubble, stir it around and let it cook for about 1 minute.
13. Return the chicken to the wok and stir until each piece is coated with the sauce.
14. Once the chicken is coated, remove the wok from the heat.15. To serve, place the chicken in a serving dish, sprinkle it with the sesame seeds and green onion. Makes about 3 servings.

Recipe: * Rinse the chicken. Cut off its nails and butt. Slice open the chicken belly lengthwise using a scissor. Pull all the innards out. Keep the stomach, heart and liver for later use and dump the rest. Extra attention should be paid not to break the inside layer of the chicken's stomach when you slice it open. * Cut the chicken into bite-sized chunks. Cut the green onion, ginger and garlic. * Pour oil into dry wok and let it heat for 1 minute, add garlic and ginger and stir them until it gives off a strong smell. Collect the fried spices into a bowl. * Pour more oil into the wok. Add a spoonful of soybean paste, add water and stir until it's fully melted. Add the chicken pieces together with fried spices and stir until the water evaporates. Add salt to your liking while stirring the chicken. Add more water until the chicken is fully immersed. Cover the wok with lid and heat. Lower heat and simmer it for 15 minutes. * Meanwhile, put the peeled chestnuts into another pot with water and heat for 15 minutes too. * Take out the boiled chestnuts and put them in the wok where chicken is. Stir more to mix them together until the meat is tender. * Sprinkle the chopped green onion. Turn off the heat and place the chicken on a dish.

As members of a meat CSA (we get a whole chicken every month) this recipe comes in handy. Cooking chicken in a pressure cooker is great.

Yes you do miss out on the crispy factor that only comes with an oven (although you could throw the pressure cooker chicken in for a few minute broil) but the flavors and juicy meat are amazingly worth the lack-o-crisp.

Another main benefit is that we are able to quickly transition from a roasted chicken meal, to using the same pot and juices to make chicken stock (from all leftovers/bones), and then to make a weeks worth of homemade soup for lunches.

As long as your chicken won't touch the sides or top of the pressure cooker, you can cook it whole. We tested the sizes and found that our 8-quart Fagor cooker was able hold a 3.5-pound bird, on a rack, with little trouble. 6 minutes per pound worked great for us.

Everyone loves chicken right? Not only is it healthy and reasonably priced, it's also versatile enough that you can serve it frequently by preparing it a variety of ways. Professional chef Cricket Azima for the Betty Crocker kitchens reveals two of her favorite chicken dinner recipes that are bound to become your family's favorites too.

Recipes:

Ultimate Chicken Fingers

2/3 cup Original Bisquick® mix
½ cup grated Parmesan cheese
½ teaspoon salt or Garlic salt
½ teaspoon paprika
3 boneless skinless chicken breast halves, cut crosswise into 1/2-inch strips
1 egg, slightly beaten
3 tablespoons butter or margarine, melted

1. Heat oven to 450ºF. Line cookie sheet with foil; spray with cooking spray.

2. Mix Bisquick mix, cheese, salt and paprika in 1-gallon resealable plastic food-storage bag. Dip half the chicken strips into egg; place in bag of Bisquick mixture. Seal bag; shake to coat. Place chicken on cookie sheet. Repeat with remaining chicken. Drizzle butter over chicken.

3. Bake 12 to 14 minutes, turning after 6 minutes with pancake turner, until no longer pink in center.

Big-Batch Salsa Chicken Fiesta

2 1/3 cups Original Bisquick® mix
½ cup water
3 eggs
3 cups shredded Cheddar cheese (12 oz)
1 tablespoon vegetable oil
6 boneless skinless chicken breasts (about 1 3/4 lb), cut into 1/2-inch pieces
2 ½ cups Old El Paso® Thick 'n Chunky salsa

1. Heat oven to 400°F. Spray 3 (8- or 9-inch) square pans with cooking spray. In large bowl, stir together Bisquick mix, water and eggs. Spread evenly in pans. Sprinkle 1/2 cup of the cheese over batter in each pan.

2. In 12-inch skillet, heat oil over medium-high heat. Cook chicken in oil, stirring frequently, until outsides turn white; drain. Stir in salsa; heat until hot. Spoon evenly over batter in pans to within 1/2-inch of edges.

3. Bake 22 to 25 minutes or until edges are dark golden brown. Sprinkle 1/2 cup of the remaining cheese over each pan. Bake 1 to 3 minutes or until cheese is melted. Loosen from sides of pan; cut into squares.

Actually there are so many ways to cook. So you can call this is runnyrunny999's kara-age. You can add whatever ingredients you want. But I would recommend you to use both garlic and ginger if you like them. I hope you guys who have watched this will cook it yourself at home. Because it tastes really good if you follow this video. And if you have time to put it in refrigerator about 1~2 hour or more before you fry it, I think it will get more tasty and juicy after it's cooked.

Here are what I used on my Kara-age today

1. 300 grams chicken (1~3 person)
2. Garlic ( 3 piece from 1 garlic)
3. 1 and half large tabe spoon of white wine ( Japanese cooking sake would be good!)
4. 1 and half large tabe spoon of soy sauce
5. 7 grams sugar (It doesn't need to be brown sugar)
6. Salt and pepper
7. Flour
8. Corn starch

**The temperature of Oil is supposed to be about 150℃~160℃. I just fried it till it turned brown in color.** [endtext]

2 tablespoons vegetable oil

4 cardamom pods (optional)

1 2-inch piece of cinnamon stick (optional)

1 medium onion, finely chopped

4 garlic cloves, chopped

2 teaspoons fresh ginger, chopped

1 medium tomato, finely chopped

1 teaspoon cumin powder

1/2 teaspoon turmeric

1 tablespoons coriander powder

1/2 teaspoon cayenne pepper (optional)

1/2 teaspoon fennel seeds, coarsely ground

1 teaspoon black pepper, coarsely ground

1/2 cup plain nonfat yogurt

1 teaspoon salt

1/2 cup water

2 tablespoons chopped cilantro

1 tablespoon fresh lemon juice

Remove the skin and all visible fat from the chicken pieces. (I often have the butcher clean the chicken.) Cut 2-3 slits, 1 inch long and 1/2 inch deep, in each piece of chicken. Set aside.

Heat oil in a heavy skillet over medium high heat. Add the chicken pieces in a single layer and fry for 3-5 minutes, turning the pieces over once or twice until they are white. Transfer the chicken to a plate using a slotted spoon.

Add cumin powder, cardamom pods, cinnamon stick, chopped onion, garlic and ginger to the oil. Fry for 7-8 minutes, stirring constantly, until the onions are golden brown.

Stir in tomatoes, turmeric, coriander powder, cayenne pepper, ground fennel seeds and black pepper. Fry for 2-3 minutes. Whip yogurt with wire wisk and add 1 tablespoon at a time, stirring constantly. Fry for another 2-4 minutes.

Add the chicken and sprinkle with salt. Stir to coat the spice mixture evenly. Pour the water evenly over the chicken. Bring to a boil. Reduce heat to low. Add the cilantro and gently stir the chicken. Cover tightly and simmer for 20-25 minutes. Chicken should be tender to the touch but should not fall apart.

Transfer to a serving platter. Sprinkle with lemon juice. [endtext]
